Ingredients

  • 01.

    Take a pan, put a tsp of ghee & fry all dry fruits. Once golden, keep them aside.

  • 02.

    Wash & soak long grain Basmati rice for 30 mins.

  • 03.

    cook rice in a deep vessel with a tsp of ghee or in a cooker for 1 whistle. keep it aside.

  • 04.

    In a pan put 1 tsp of ghee & add cinnamon, clove & star anise. crackle them.

  • 05.

    Now add cooked rice & sugar & 2 tbsp of ghee. mix it nicely.

  • 06.

    Divide into 3 equal parts to color rice in tricolor.

  • 07.

    ** if making Zarda pulao in single color , add food color in water while cooking rice in vessel or cooker. **

  • 08.

    Add 3-4 drops of food color to rice & cover it. cook for 5-7 more mins

  • 09.

    Sweet pulao is ready with nice colors. Top with fried dry fruits, mix & serve.

  • 10.

    If using more than 1 color to make Zarda pulao, do not mix rice when it looks wet, leave it covered for 10 mins. let the color settle & rice becomes a little dry, so the colors will not leave marks on other color rice.
