Sabudane ki kheer (or) sago pudding

Cook: 15 mins

Yields: 2-3 people

Ingredients

  • 01.

    Wash sabudana 2-3 times with water & soak it for 2 hrs.

  • 02.

    When Sago gets soaked it increases in size & become soft. Check it with fingers.

  • 03.

    Now sieve & drain excess water & keep it aside.

  • 04.

    Take milk in a heavy bottom pan & let it boil.

  • 05.

    When it comes to boil then add sabudana pearls in it & stir it.

  • 06.

    Cook it on low-medium flame and keep stirring so that it does not stick to the bottom.

  • 07.

    Slowly milk start getting thick because sabudana is all starch & starch thickens any liquid.

  • 08.

    Sabudana will turn transparent slowly.

  • 09.

    Add sugar & let it boil for 10-12 mins approx.

  • 10.

    Now add cardamom powder & turn off the flame.

  • 11.

    Garnish it with nuts & saffron and serve hot or warm.

  • 12.

    NOTE:- This a type of Kheer which taste best when warm or hot but you can serve it chill also. Once cooked keep it in refrigerator to get chill. But pls note that sabudana absorbs milk, so when you will keep it in refrigerator for chilling it will soak all the milk & turn solid. So before serving you need to add more milk into it to make it in a nice Kheer form. If you prefer warm kheer then add warm milk & microwave a little. And if it you like it chill then add cold milk it it. Enjoy this Kheer as a breakfast, a dessert or just anytime when your sweet tooth tingles you :)
