Vermicelli upma

Ingredients

  • 01.

    Cut all vegetables in small pcs. If you want you can add cauliflower & mushroom too, that depends upon your taste .Only you need to chop them in small pcs.

    Now take a pan or kadai & put oil in it. Add curry leaves & rai. let it crackle.

  • 03.

    Add green chili & chopped onion & saute them for 2 mins.

  • 04.

    Now add all chopped vegetables & Saute them for a while.

  • 05.

    Put salt, turmeric, red chili powder (optional, as per taste) & cook vegetables on a low flame covering the pan.

  • 06.

    After a while vegetables will look soft & half cooked.

  • 07.

    Now add roasted vermicelli, mix them & add water.

  • 08.

    Be careful while putting water. It should be only enough to dip vermicelli, Too much water will make it lumpy & sticky.

  • 09.

    Cover the pan & let vermicelli cook on a low flame for 4-5 mins.

  • 10.

    Keep stirring it at intervals. You will see that Vermicelli increases its size & become soft.

  • 11.

    Check it by mashing it between fingers. Now increase the flame & stir on high flame for a min or two.

  • 12.

    Your Vermicelli upma is ready. You can add roasted or fried groundnuts too.

  • 13.

    Garnish it with coriander leaves & serve hot.

  • 14.

    Enjoy it as a breakfast with Milk/Juice or like a snack with tea/coffee.
