Ingredients

    Boil 1 lt milk and let it rest for 5 mins.

    Now mix vinegar & water - 2-2 tbsp

  • 03.

    add it to hot milk & keep stirring. slowly milk starts separating.

  • 04.

    Sieve it into a fine cloth & strainer & hang chena for 30 mins to drain the whey completely.

  • 05.

    Now to make rabri - boil another 1 lt of milk in a heavy bottom pan & keep stirring.

  • 06.

    Add a few strands of Kesar into it & let the milk boil for 20-30 mins.

    Now add sugar, elaichi powder & chopped dry fruits.

  • 08.

    Stir , milk rabri should not be too thick so turn of the flame and keep it aside.

    To make chena balls - start mashing chena in a big plate using the upper part of your palm.

  • 10.

    Mash it for 8-10 mins. chena will get smooth & create a dough.

  • 11.

    Once chena dough is ready make small balls from it.

  • 12.

    Other side make sugar syrup with sugar & water & boil it for 10 mins on low flame.

    Now turn the flame high & start putting chena balls into it. Keep stirring in between.

    Boil on high flame for 15 mins & then remove chena balls squeezing gently from sugar syrup.

  • 15.

    Transfer them to rabri & stir well. Cover & let it rest in refrigerator.

  • 16.

    Now Chena Pie is ready to serve, garnish with some kesar, dry fruits & rose petals.

  • 17.

    Cook on low & medium flame for 20-25 mins. milk thickens.
