  • 01.

    Soak clay pot in water overnight (if using it first time).

  • 02.

    Wash chicken pieces & marinate for 30-40 mins with ginger garlic paste, salt, red chilli powder & turmeric.

  • 03.

    Place Handi (clay pot ) on cooktop & add oil. spread oil as shown in video.

  • 04.

    Add whole spices & let it crackle.

  • 05.

    Now add sliced onions & fry till they are golden brown.

  • 06.

    Crush ginger, garlic & green chili in grinder & add with onions.

  • 07.

    Fry them till the raw aroma goes away. add chopped tomato. stir till they are mushy.

  • 08.

    Now add chicken pieces & stir well. put salt, chilli powder, garam masala, turmeric & kashmiri red chilli powder. add water. mix it. cook on medium to low flame.

  • 09.

    Keep stirring in between, chicken should not stick to the bottom of pot.

  • 10.

    When it starts boiling adjust salt & chilli powder. add chicken masala, ghee & chopped coriander.

  • 11.

    mix everything nicely & put the lid. seal it with dough & cook on very low flame for 15-20 mins.

  • 12.

    Turn off the flame & let it sit for 10 mins.

  • 13.

    Now remove the dough & open the lid & stir carefully. Handi chicken is ready to be served with its delicious taste & earthy flavor.
